Let me just say, I’m not a big fan of nuts. To me, they are all types of dry and bland. And don’t get me started on those surprise walnuts in brownies. Those are the worst; they just suck the fun out of the whole thing. BUT if I’m given nuts that are covered in sugar and caramelized to a golden sticky perfection, I’m cool with that. Just as long as the nut flavor is masked by anything other than more nut flavor.

That was my mindset when I was creating this recipe. Honestly, I think I added way too much maple syrup, but I LOVE IT. It tastes more like a granola brittle or toffee because it’s sticky, chewy, crunchy, sweet, and caramel-y all at once. If you are looking for a harder and more dry product, you can try adding less syrup and sugar, but I’m telling you—it’s SO GOOD with all of that up in there!! And with all of the yummy add-ins maybe I should’ve called this trail mix instead of granola… oh well, too late.

I was at Safeway and filled a bag with some bulk almonds, but decided I didn’t want them anymore so I snuck them on a random shelf and left them there. I felt like a super sly secret agent hiding “the goods” somewhere important, until I realized the lady behind the floral stand totes saw me. I guess I won’t be becoming a secret agent anytime soon. (fun fact: being in the CIA is an actual fantasy of mine)

Oh and after I paid, I was almost out the door when I heard “HEY LADY! YOU DROPPED YOUR NUTS!!” behind me. Oops. What a scene that was.

Homemade Granola
| makes about 4 cups |

Base
  1. 2 cups rolled oats (not instant)
  2. ⅓ cup maple syrup or honey
  3. ¼ cup packed brown sugar
  4. ¼ cup canola oil
  5. ½ teaspoon salt
Before baking add-ins
  1. (about 1 cup total; less or more to your liking)
  2. raw nuts
  3. seeds
  4. coconut chips
  5. 1–2 tablespoons additional spices or syrups
After baking add-ins
  1. (about 1 cup total; less or more to your liking)
  2. dried fruits
  3. chocolate
  4. candies
  5. shredded coconut
  6. crushed cookies
Instructions
  1. Preheat oven to 300° F and line two baking sheets with parchment paper; set aside.
  2. Mix all base ingredients together in a large bowl. Stir in any items from the before baking add-ins list.
  3. Spread evenly on the baking sheets and bake for 15mins. Stir and rotate baking sheets. Bake 5–10 more minutes or until golden brown.
  4. Let cool, stirring occasionally. If you want larger chunks, avoid any stirring and let cool completely before breaking the slab into desired chunks.
  5. Mix in any desired items from the after baking add-ins list and enjoy! Or package the cooled granola in cute jars for easy gifts—it’s so easy to mix and match the flavor combos!

More holiday combo ideas:

Pumpkin Spice Latte – walnuts, pumpkin seeds, pumpkin pie spice (cinnamon, nutmeg, cloves, cardamom)
Gingerbread – pecans, molasses, ground ginger, cinnamon, nutmeg, cloves, crumbled gingerbread cookies, dusting of powdered sugar
Smore’s – basically the same as the hot chocolate ingredients, but adding in some crushed graham crackers would be awesome!
Peppermint Bark – almonds, crumbled peppermint bark (or white and milk chocolate chips with crushed peppermint candies), cocoa powder, peppermint extract
Autumn Apricot – cashews, almonds, dried apricot, coconut chips, cinnamon

You can also just make a plain batch or even try making non-holiday flavors like blueberry or vanilla. Ooooh cherry vanilla sounds legit.
